THE AUTUMN WRAP UP BLOG SERIES - Part 2 - Gather
PUMPKIN ENERGY BITES
1 cup old fashioned rolled oats
1/4 natural peanut butter
1 tsp cinnamon
1 tsp nutmeg
1 tsp ginger
Pinch pink salt
1 cup pumpkin puree
1/4 cup honey
1 tsp vanilla extract
1/4 cup chocolate chips
OPTIONAL: add chopped herbs like mint or thyme and or food grade essential oil for taste consider food grade lavender or orange
In a glass bowl combine all ingredients and stir with a fork.
Roll mixture into small balls. Let sit for 20 minutes to form.
Store in a glass container with an airtight lid in the refrigerator.
Perfect homemade lunch snack. Take these in out in a small glass container to avoid fast food temptations. Take these to events to add a healthy snack to the table.
